The blue potato can be used for all traditional recipes with a colour that always surprises.
The blue potato is an old variety from the Peruvian Andes.
Characterized by blue-violet skin and flesh, the same as the Vitelotte cultivated in the French region of Picardy, and the blue of St. Gallen, from the Swiss canton of Grisons.
Opo Veneto has begun marketing blue potatoes with the low volume
targetting restauration. Its flavour is pronounced and it is multi-purpose as it can be boiled, fried, baked or mashed.
