The Sweet Onions of the Cevennes are available for sale for a few days. Onions are planted in February, subcultured in May, harvested by hand in August and then prepared to obtain a beautiful pearly dress, shining by the fineness of tunics (the outer skin).
The Sweet Onion of the Cevennes is characterized by a soft texture and a sweet taste. It is eaten both raw and cooked and contributes to the success of many recipes. This is the first onion in Europe to benefit from CDO (controlled designation of origin) since October 2003 and PDO (protected designation of origin) since July 2008.
