In Spain, around 414,000 tons of carrots are harvested each year, with Andalusia being the leading region in production. Outstanding among all the Spanish provinces, Cadiz is positioned as the largest producer, with 185,200 tons grown on more than 3,000 hectares.

Carrot cultivation has its origins in Asia and has a history of more than two thousand years. It is one of the most cultivated vegetables in the world today. Europe, Asia and the United States lead the global production of carrots, being this root highly valued since Ancient Greece by certain social strata.
In Andalusia, where carrot production is mainly aimed at the international market, packaging companies are also responsible for its cultivation, especially during periods of high prices.
More than 80% of the production is consumed fresh, while the rest is destined to the industry for processing in different formats such as frozen, canned, dehydrated and baby food, among others. Approximately 20% of total production is exported to other markets.
