The technology puts ripening “on hold” to boost storage potential. 1-methylcyclopropene (1-MCP) is active ingredient which is similar to ethylene, a naturally occurring hormone that causes fruit to ripen. SmartFresh interacts with ethylene-sensitive sites in the fruit to control its response to internal and external ethylene sources. This delays the ripening process, so that softening and over-ripening occur much more slowly.
