Production of fruit and vegetables in Macedonia

Favorable climate conditions in Republic of Macedonia make it possible for production of several kinds of quality vegetables. Leading positions in this regard belong to the potato, tomato, pepper, cabbage and onion. In typical vegetable regions, production is under plastic (greenhouses) with or without heating, as well as on open fields.
Most of the vegetables (60%) are produced for processing or export. Vegetables demand is estimated at approximately 200,000 tons.
Vegetable and fruit processing facilities produce traditional Macedonian products (marinated vegetables, home made “ajvar”, baked peppers, “lutenica”, “gjuvech”, dried peppers and dried vegetables etc.) out of which 70% is exported.
The apple holds the leading position among the fruit, then the plums, pears, peaches, apricots, cherries, sour cherries, walnuts etc. Domestic consumption of fresh fruit exceeds 42,000 tons or 36% of the whole production. Besides, large quantities of table grapes, exotic fruits, and processed fruit (juice, dried fruits, jam) are being consumed as well. The existing processing facilities process various fruit: 80% of the products (apple concentrate, sour cherry, processed fruit, jams, marmalade etc.) are exported to other countries.
Highly educated staff in the Macedonian fruit and vegetable companies play significant role in application and transfer of new technologies in the production and processing of fruit and vegetables.
