Demand still outstrips supply and the situation could continue

Organic products now account for 15% of sales and domestic production is unable to meet market needs.
In the United States, according to a COBANK report, demand for organic products continues to grow at a rate above production.
Sales of organic products have doubled in value between 2011 and 2015, now reaching USD 5.5 billion per year. Sales of organic fruits, vegetables and nuts have increased significantly and this trend will continue according to analysts.
But production has not kept up and the gap between the growing demand and the available supply will widen despite an increase in dedicated areas.
For analysts, one of the hindrances to higher production would be the length of the required transition period (between conventional and organic agriculture) that limits expansion. Also, the gap between supply and demand could continue over the next 3-5 years.
