Jalisco sets higher record in the guacamole world record

With agility and speed, the cooks cut the ingredients that were then placed in a large container, where a dozen chefs completed the preparation (photos: Twitter Seder Jalisco).
The Jalisco Mexican states now holds the GUINESS record in terms of the biggest guacamole producer in the world with 2,98 tons (2,66 tons were the previous record set established in the Michoacan state in 2015).
On the main square of the old town of Buenos Aires (south of the state of Jalisco) around 1550 inhabitants and students of 14 schools of gastronomy have succeeded in preparing 2980 kg of guacamole in just 90 minutes.
The recipe required 25,000 avocados, 3,500 tomatoes, 750 onions, 90 clusters of coriander and juice of 3,000 lemons. After the record was established, this guacamole was served to the public with toasts and totopos (pieces of fried corn tortilla).
The state of Jalisco, over the past 4 years, has grown from a production of 40,000 tons of avocados per year to 146,000 tons. In 2016, exports totaled 69,000 tonnes, not 35% to Canada, 30% to different countries in Europe, 25% to Japan and 10% to Central and South America, Hong Kong and the Middle East.
