The various carrots will allow to elaborate natural food coloring agents while offering strengthened nutritional values.
Vegepolys, vegetable pole of competitiveness, announces the positive results of a project on new varieties of white, yellow, pink or purple carrots which will allow elaborating natural food coloring agents dedicated to the food-processing industry while offering strengthened nutritional values.
Vilmorin companies, Clause Vegetable Seeds, Diana Natural, Genhort, Agrocampus Ouest, University of Angers and INRA, has studied since 3 years the factors of pigmentation and nourishing contributions of carrots of all colors, characterized for their variety in pigments.
This action is made in order to:
- Meet the new needs of market and consumers in terms of colors, taste or health (sugar, consisted aromatic, anti-oxidizing capacity).
- Meet the needs of producers by more resistant varieties.
- Answer the industrialists to produce useful natural colouring agents in drinks, yoghurts, cake stores.
