The President of the Gaziantep Commodity Exchange states that, now dried vegetables are a registered items quoted in stock market. And he added that, in 2013, 7 million 511 thousand 809 product were processed.
The dried products are not limited to eggplants and peppers. The process of drying is also applied to tomatoes, gherkins and parsley, among other vegetables.
