Spinach consumption jumps

According to figures from the US Department of Agriculture, spinach consumption in the USA increased by 66 percent from 1992 and 2002.
The increased availability of washed and packed baby spinach is driving the market, and in a recent survey by food magazine Bon Appetit, spinach was voted as people's favourite vegetable.
