The price of cabbage is soaring, threatening the traditional dish.
Kimchi is a traditional Korean dish made from fermented vegetables and chili peppers. Kimchi, especially the cabbage variety, is a staple on Korean tables.
In South Korea, the national kimchi-making season, or gimjang, occurs in late autumn and early winter. However, more than a month before the kimchi-making season, local media is reporting tensions arising from price increases.
Currently, the wholesale price of a head of cabbage is around 8,900 won (USD 6.46), marking a 128% year-on-year increase, according to the Korea Agro-Fisheries and Food Trade Corp.
Typically, prices decline as cabbage harvests peak in November. The Ministry of Agriculture, Food and Rural Affairs is preparing measures to ensure price stabilization and a steady supply of kimchi ingredients.
