A new washing process without the use of water

A Canadian company based in southern Ontario has developed innovative technology that cleans products without the use of water. While water has an efficiency of only 50% this process can reach 99.9% in the elimination of contaminants, bacteria, pathogens and molds.
This process developed by Clēan Works has been validated by the Department of Food Science at the University of Guelph, Canada's leading agri-food institution.
Without water and ultra-fast (30 seconds) the process uses ultraviolet light, vaporized hydrogen peroxide, ozone. Ozone, airflow, humidity, time and temperature are monitored throughout the decontamination process. Once finished, the product is ready to be processed, packaged or shipped directly to the customer.
"Our process, with our strict operational procedures, removes almost all the contaminants, bacteria and pathogens found in food," says Paul Moyer, co-owner of Clan Works. "It reduces health risks by making fruit and vegetable consumption safer, increases shelf life and saves a lot of water."
Clan Works is a joint venture between Canadian apple producer Moyer's Apple Products and Industrial Court Holdings Ltd. The Department of Food Science at the University of Guelph has partnered with Clan Works to test the processes and share the results with other scientists.
