Creation of the first vinegar made from fresh strawberries

A new outlet for the strawberry sector with the development of the first vinegar made from fresh strawberries, carried out by scientists at the University of Seville, along with other ones from Tarragona.
The main ingredient of this new product is strawberry puree provided by Hudisa, a company specializing in fruit puree. This first strawberry vinegar uses a strawberry puree, made with fruit not selected for faults of form or color. Quality fruit, but with appearance defects, such as for the production of fruit juice or jam.
The scientists point out that - for existing vinegars - the aromas of strawberries, synthetic for the most part, are added at the end of the process. They ensure that the new product retains the antioxidant qualities of fresh fruit.
