Consumption has increased from 80 kg to 96 kg per capita in the last 15 years, according to the Spanish publication Agronoticias.
At the same time, vegetable production and the land area allocated for growing vegetables have also grown. In 2007, 112,700 ha of land were used to grow vegetables, with North Rhine-Westphalia being the Federal State with most output (18% of the national total). In this region, vegetable growing occupies 20,040 ha in open fields and 250 ha in greenhouses, with an increase of 0.5% compared with the 2 previous years.
Production of asparagus in particular, but also of carrots and spinach, has experienced major growth.
In the case of cabbage and cauliflower, while still maintaining a significant presence in the German vegetable market, production has dropped 12% in recent years.
