As the largest supplier to North America, Mexico produces almost 90 million pounds of eggplant each year. A surprising amount given that eggplant is not commonly consumed in Mexico, and most eggplant is grown for export to the U.S. and Canada. In addition to the traditional large, oval-shaped variety, Mexico grows Chinese, Italian and Hindu eggplants. Most of Mexico's eggplant is grown in three states-Sinaloa the largest exporter of eggplant, where deliveries begin in October and continue through June. In Culiacán and Los Mochis harvest begins in early November and continues through May, in Sonora where eggplants are harvested in the fertile growing regions around Hermosillo from early March through July and in Baja California with its moderate climate of San Quintin regions which results in two distinct seasons of eggplant production. The first season begins in early October and continues through December, the second lasts from March through early June.
