EVOOlution is an innovative olive monitoring and sorting system for oil mills that, by classifying each olive by maturity index and presence of defect, ensures the quality of the extra virgin olive oil produced. The system optically select each olive to remove those that are not desired in the grinding (either due to the incorrect degree of maturity, or because having a defect this influences the properties of the oil) with a speed of more than 5 million olives an hour.
After receiving and weighing, the olive goes through EVOOlution that continuously analyzes each olive detecting defects such as fly bites, olives frozen by low temperatures, mummified olives, fungi and other superficial damages or even other unwanted materials such as stones, olive knots, plastics, etc. derived from harvesting. The complete olive flow is classified, counting EVOOlution with 3 sorting outputs.
Furthermore, olive monitoring and sorting system allows to differentiate and classify the eight ripening stages of the olive, analyzing the external coloration of the skin and the internal color of the pulp without destroying the fruit. Selecting by maturity allows to separate the more mature ones and lengthen the Extra Virgin campaign as well as playing with the organoleptic profiles of the oils obtained.
Another application, no less important, arises from obtaining data. EVOOlution collects all the information on the quality and maturity of each olive and presents it, grouped, in easy-to-interpret reports. This data can be key for decision-making that affect the oil process or the olive purchase management.
Test results in Spain, Chile and Portugal showed that EVOOlution has been able to eliminate with a high percentage of efficiency defects such as olives affected by the Anthracnose fungus, olives with damage caused by water stress and a drop in temperatures or “mummy” olives, very common in mechanized harvests.
